Lasagna Soup Ingredients

Lasagna Soup:

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 500g beef mince (20% fat)
  • 1 large onion, diced
  • 4-5 cloves garlic, minced
  • 400g passata or chopped tomatoes
  • 2 tbsp tomato purée
  • 600ml Full of Broth’s beef bone broth
  • 100ml double cream
  • 9 uncooked lasagna sheets, broken into pieces
  • Handful of fresh basil, roughly chopped
  • 1 tsp salt (adjust to taste)
  • 1 tsp each of black pepper, garlic powder, onion powder, paprika, mixed herbs
  • ½ tsp sugar

Ricotta Topping:

  • 300g ricotta cheese
  • 30g mozzarella cheese
  • 30g Parmesan cheese
  • Handful of fresh parsley, chopped
  • Salt and pepper, to taste

How to Make Lasagna Soup

Step 1: Sauté the Aromatics

  • In a large pot over medium heat, melt the butter and heat the olive oil.
  • Add the onions and garlic, cooking until soft and fragrant.

Step 2: Brown the Beef

  • Add the minced beef and season with salt, black pepper, garlic powder, onion powder, paprika, and mixed herbs.
  • Cook until the beef is browned, breaking it apart with a spoon.

Step 3: Build the Base

  • Stir in the tomato purée, passata, and beef bone broth.
  • Reduce the heat and let it simmer for a few minutes to develop the flavors.

Step 4: Cook the Pasta

  • Pour in the double cream and add the broken lasagna sheets directly into the pot.
  • Stir occasionally and let the pasta cook until tender.

  • In a bowl, mix the ricotta, mozzarella, Parmesan, parsley, salt, and pepper until combined.
