Lasagna Soup Ingredients
Lasagna Soup:
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 500g beef mince (20% fat)
- 1 large onion, diced
- 4-5 cloves garlic, minced
- 400g passata or chopped tomatoes
- 2 tbsp tomato purée
- 600ml Full of Broth’s beef bone broth
- 100ml double cream
- 9 uncooked lasagna sheets, broken into pieces
- Handful of fresh basil, roughly chopped
- 1 tsp salt (adjust to taste)
- 1 tsp each of black pepper, garlic powder, onion powder, paprika, mixed herbs
- ½ tsp sugar
Ricotta Topping:
- 300g ricotta cheese
- 30g mozzarella cheese
- 30g Parmesan cheese
- Handful of fresh parsley, chopped
- Salt and pepper, to taste
How to Make Lasagna Soup
Step 1: Sauté the Aromatics
- In a large pot over medium heat, melt the butter and heat the olive oil.
- Add the onions and garlic, cooking until soft and fragrant.
Step 2: Brown the Beef
- Add the minced beef and season with salt, black pepper, garlic powder, onion powder, paprika, and mixed herbs.
- Cook until the beef is browned, breaking it apart with a spoon.
Step 3: Build the Base
- Stir in the tomato purée, passata, and beef bone broth.
- Reduce the heat and let it simmer for a few minutes to develop the flavors.
Step 4: Cook the Pasta
- Pour in the double cream and add the broken lasagna sheets directly into the pot.
- Stir occasionally and let the pasta cook until tender.
Step 5: Prepare the Ricotta Topping
- In a bowl, mix the ricotta, mozzarella, Parmesan, parsley, salt, and pepper until combined.
Step 6: Serve and Enjoy!
- Once the pasta is fully cooked, stir in the fresh basil.
- Ladle the soup into bowls, top with the ricotta mixture, and serve immediately.
